Earl Grey & Poppy Seed Cupcakes

My fabulous friend Shardee is launching her very own tea company, What’s that Tea?, and after many years of tea (and gin) drinking together I was thrilled to be asked to help out with the food for her launch. I hit upon the idea of creating a mini tea degustation matching 6 hors d’oeuvres to each of the teas in Shardee’s launch collection. So I hit the web looking for ideas and was inspired by raspberri cupcake’s Earl Gray and Poppy Seed Muffins. However as it was a launch party I wanted to make them a little bit special whilst boosting the tea flavour a bit and bringing out the citrus notes from the Earl Grey tea. Thus my Earl Gray and Poppy Seed Cupcakes were born:

You will need:

  • 3 tbsp  good quality loose leaf Earl Gray tea (I can sincerely recommend the Earl Gray from What’s that Tea?)
  • 1 cup full cream milk
  • 2 1/2 cups self-raising flour
  • 1 1/2 cups golden caster sugar
  • 3 tbsp poppy seeds
  • 125g butter
  • 2 free-range eggs
  • 250g light cream cheese
  •  1 tsp orange oil

Place your tea and milk in a small saucepan and bring to a gentle simmer for 2 minutes. Turn off the heat and allow to cool and steep. Sift the flour into a large mixing bowl and add 1 cup of the caster sugar and 1 tbsp of the poppy seeds and stir and create a well in the centre. Strain the tea leaves from the milk whilst pouring it into a bowl and add the eggs and whisk until combined. Melt  your butter and pour into the egg/milk mixture whisking quickly until combined. Add this wet mixture to your dry mixture and stir gently until just combined. It will be a fairly firm mixture.  Spoon into a lightly greased non stick mini muffin tin, the mixture should make 24. Bake in a 170 degree oven for 20 minutes or until risen and springy when touched. Remove from the tin and cool on a rack. While they cool beat the cream cheese with the remaining caster sugar  and orange oil until smooth and creamy. Ice the cupcakes and use the remaining poppy seeds to sprinkle on the top.
